I have to admit I found this feature by accident (I hit ‘g’) – but I’m glad I did. If you open View -> Sort by and select Date, Ascending and Grouped by Sort Thunderbird groups your mails into Today, Yesterday, Last Week, Two Weeks Ago and Old Mail and allows you to minimize different groups of mails with a click.

The image on the right shows this view used on my Spam Folder.

At least in Thunderbird 1.5 this feature is also available if you use sort by sender and groups all mail from one sender.

Tried it and it’s still not comparable to Outlooks grouping :(
